Another quick low-effort recipe for a summer’s day.
Bet your ham sandwich doesn’t look so appetising now.
Watermelon, Feta, and Mint Salad
Ingredients:
- Watermelon, cut into chunks
- Large Tomatoes
- Sweet gem lettuce
- Mixed salad bag
- Cucumber
- Red onion
- Feta cheese
- Olive oil
- Mint leaves
Recipe:
1. For the base of this fresh and summery salad, you’ll need a sweet gem lettuce and a few mixed leaves from a salad bag. You can work out the proportions of the ingredients yourself based on how many people you’re serving, as this isn’t really an exact recipe!
2. Thinly slice up some cucumber, a few really ripe tomatoes (not straight from the fridge) and a little bit of red onion.
3. Destone a handful of olives and chop those up too.
4. Then add in some chunks of fresh watermelon (Tesco has them on special offer this week!) and crumble over some feta cheese – a delicious combination of sweet and salty.
5. Dress the salad with a swig of olive oil and season with salt and black pepper. Finally, sprinkle over some fresh mint leaves.
