Banana cake is possibly the easiest and tastiest cake to make. It’s so versatile too, as you can add whatever extra ingredients you would like to! Nuts, seeds, chocolate, fruit… anything you fancy. Previously, I have written a banana cake recipe with homemade oat flour (you can find that here!) for WILD magazine, but this time I am back with a slightly different recipe.

With this cake, I can justify having a huge slice… it has blueberries after all; they’re a fruit! Pair a yummy slice of this banana, blueberry and chocolate loaf with some fruit on the side and a dollop of soya cream or custard. It’s the perfect dessert!

Ingredients:
- 3 ripe bananas
- 60ml vegetable oil
- 100g brown sugar
- 200g plain flour
- 3 teaspoons baking powder
- 2 teaspoons cinnamon
- 70g blueberries
- 70g vegan chocolate chips
- 3 tablespoons of dairy-free milk
Method:
1. Firstly, preheat your oven to 180 degrees and grease your baking tin.
2. Mash your bananas in a bowl, then mix in the sugar and vegetable oil.
3. Next, add the flour, baking powder and cinnamon.
4. Add the milk a tablespoon at a time and mix in very well.
5. Finally, stir in the chocolate chips and blueberries.
6. Add the mixture to your baking tin and bake for 40 minutes, or until the knife comes out clean when you test the cake.
7. Serve with some lovely soya cream and fruit!
